Nancy's Panini with Prosciutto, Mozzarella, Tomato, & Basil

Whisk together in a small bowl:

1/2 c olive oil
3 Tablespoons Balsamic Vinegar
1 lg clove Garlic, chopped
salt and pepper to taste

Sandwich ingredients:

8 ounces Prosciutto
5 ounces whole milk Mozzarella grated
5 ounces Cave Aged Gruyere cheese grated
12 slices tomato
12 large basil leaves
12 large arugula leaves
1 13x6.6x1.5" ciabatta bread, halved horizontally

  1. Mix together grated cheeses.
  2. Layer fillings on bread
  3. Sprinkle with salt and pepper
  4. Cut bread into four sections
  5. Prepare BBQ or Panini grill to medium heat
  6. Brush outsides of bread with olive oil
  7. Grill until bread is golden and cheese melts (about 5 minutes per side)
