Julia's Chicken Tortellini Casserole
2 lbs chicken breasts, boneless/skinless
1/2 cup water
1/2 cup sugar
1/2 teaspoon salt
1/2 teaspoon pepper
12 oz. Can cranberry juice, frozen concentrate
Mix above ingredients and marinate overnight. Grill the
chicken and shred it.
Cook 1 large (Costco size) or 2 grocery size packages of
cheese tortellini.
Mix
- 2 large jars of any sun dried tomato cream sauce
- 8 oz. sun dried tomatoes, drained and sliced
- 8 oz marinated artichokes, drained
- 1 cup grated Parmesan cheese
Mix all ingredients together in casserole dish. Sprinkle more cheese on
top. Cook at 350 for 1 hour, until heated through. You can sprinkle
freshly cut basil on top, and serve.
