Julia's Jicama Salad

1 jicama, peeled and julienned (I grated it in the cuisinart)
2-3 red or yellow bell peppers, stemmed, seeded, julienned
1/4 cup chopped fresh cilantro leaves
Mix above three ingredients in a big bowl and toss with Lemon Vinaigrette dressing.

Lemon Vinaigrette dressing:

Combine all ingredients for dressing except the olive oil in a small bowl. Whisk in the olive oil until dressing thickens.
