4.5 cups chopped iceberg or romaine lettuce
2 T chopped fresh cilantro
3 green onions chopped fine
1 cup chopped tomatoes
1 cup chopped peeled jicama
1 cup frozen thawed petite white corn kernels
3/4 c canned black beans (rinsed & drained dry)
1 avocado, pitted, peeled & diced
1/4 c feta crumbled (optional)..can also use grated sharp cheddar instead
Mix all ingredients together. Top w/ chicken lightly tossed in BBQ sauce and crumbled tortilla chips. Mix w/ ranch dressing.
