Sesame Dressing
1/4 cup rice wine vinegar
4 teaspoons soy sauce
1 tablespoon sesame oil
1 tablespoon honey
2 teaspoons grated orange peel
1 tablespoon fresh orange juice
2 cloves garlic, finely chopped
2 teaspoons grated fresh gingerroot
1/2 teaspoon ground white pepper
Whisk together al ingredients in small bowl. Set aside.
Salad
3/4 cup pearl barley
2-1/4 cups water
2 cups cooked and chopped chicken
1 can (15 ounces) mandarin oranges, drained
1 cup pea pods, trimmed, cut in half and blanched
3/4 cup chopped red or yellow bell pepper
2 medium carrots, peeled and shredded
3 tablespoons chopped green onions
3 tablespoons chopped fresh cilantro leaves
In medium saucepan with lid, bring water to a boil. Add barley and return to boil. Reduce heat to low, cover and cook 45 minutes or until barley is tender and liquid is absorbed. Cool. In large bowl, combine chicken, mandarin oranges, pea pods, bell pepper, carrot, green onions and cilantro. Mix in cooked and cooled barley. Drizzle dressing over salad and mix well. Makes 8 servings.
