5 cups or 3 cans chicken broth
1 cup salsa (mild, medium or hot - depending on your taste)
1/2 of a de-boned deli roasted chicken
2/3 cup dried tomatoes, snipped into thin strips
1 teaspoon ground cumin
1.5 cups fresh or frozen corn kernels
1 tablespooon fresh lime juice
1/4 cup fresh cilantro
1/2 cup chopped green onions (optional),/p>
Toppings: broken tortilla chips, 1 diced avocado, grated pepper jack, sour cream (optional)
Combine broth, salsa, dried tomatoes and cumin. Bring to a boil, reduce heat and simmer gently 8 min. or untiil dried tomatoes are tender. Add corn, cooked chicken and lime juice and cook about 3 min. more. Remove from heat, stir in cilantro and green onions. Ladle into bowls and pass toppings around. Quick, easy and delicious.
